Serves 4-6
4-6 boneless catfish filets
1 stick (1/4 cup) butter, softened
½ bunch parsley, chopped
1 Tbsp. Garlic Citrus Pepper
Preheat grill to medium heat.
In a bowl, mix together the softened butter, chopped parsley and Garlic Citrus Pepper. Tear off a large piece of aluminum foil and spray with non-stick spray. Place catfish filets on foil and evenly top each filet with the seasoned butter. Coat an additional piece of aluminum foil with non-stick spray and cover the filets. Fold over edges of foil to form a seal, folding edges up to keep butter in the foil pouch. Grill for approximately 15-20 minutes, until catfish flakes. Carefully transfer foil pouch to a tray and remove top layer of foil. Remove catfish with a spatula, pour butter over the fish and serve.
