Ingredients: Serves 4-6
• 4-6 thick cut chops (chicken may be substituted)
• 2 cups hot water
• ¼ cup Fire Roasted™ Steak & Grill seasoning
• 2 Tbsp sugar
• About 2 cups ice
Pour hot water into a bowl. Stir in the sugar and Steak & Grill seasoning until dissolved. Add ice to cool completely. Pour mixture into a large re-sealable bag. Place pork chops in mixture and remove as much air as possible from bag. Refrigerate for a minimum of 30 minutes, but no more than 2 hours. Drain liquid from meat, reserving any spices. Rub spices into meat. Cook on a preheated, medium-heat grill until meat reaches an internal temperature of 170 degrees. (If using your broiler, place on low setting on middle rack, turning once.) Brush on Lemon Dijon Glaze when chops are almost done.
To make Lemon Dijon Glaze: Combine 1 teaspoon Dijon mustard, 1 tablespoon lemon juice, and ¼ teaspoon sugar. Whisk in 3 tablespoons olive oil until uniform.
